Pumpkin Risotto
We believe that pumpkins are not only delicious but also packed with nutrients and vitamins that can help you live a healthier and happier life. This Pumpkin Risotto recipe is just one of the many ways we celebrate this wonderful food. Definitely one of our favorite comfort foods for fall!
Ingredients
1 small onion (diced)
1 clove garlic
1 tablespoon olive oil
1 tbsp butter
1 ½ cups arborio rice
1 ½ cups of pumpkin puree
2 cups vegetable stock
1 cup white wine
1 cup freshly grated parmesan
½ tsp nutmeg
½ tsp cinnamon
½ tsp pepper
2 - 3 fresh sage leaves
1 rosemary sprigg
Directions
In a large saucepan sauté onions, garlic and sage in butter for approximately 2 minutes or until they start to soften.
Add rice stirring for about 90 seconds allowing the rice to become coated in the buttery mixture.
Add the rosemary sprig to the saucepan and begin to slowly add the wine and stock to the rice in small batches. This allows the rice to properly absorb the liquid to achieve that creamy texture. This should take around 20 minutes.
Once rice is tender stir in the pumpkin puree, parmesan cheese, nutmeg, cinnamon and pepper.
Serve immediately with extra parmesan.
