Ingredients

1 unbaked pie crust,

1 1/2 cups pumpkin puree,

1 cup milk,

3 eggs,

1/2 cup shredded cheddar cheese,

2 tbsp parmesan cheese

1/4 cup chopped onion,

2 cloves minced garlic,

1 tsp dried thyme,

 ½ tsp. nutmeg,

1/2 tsp salt,

1/4 tsp black pepper.

Directions

For even cooking we recommend using an oven safe glass pie pan.  Also, to prevent quiches from ending up with soggy crust by pre-baking the crust following the directions on the packaging.

Preheat oven to 375 degrees F. In a large bowl, whisk together pumpkin puree, milk, and eggs. Add in cheese, onion, garlic, thyme, salt, and pepper and whisk until fully combined.

Pour mixture into the pie crust and bake for 35-40 minutes, or until set (all ovens seem to cook differently in our opinion). Let cool for 10 minutes before slicing and serving.  Check after 25 minutes and cover the edges of the crust with aluminum foil if needed to prevent burning.
