Pumpkin Stuffing

Ingredients

5 tablespoon olive oil

3/4 cup butter, unsalted

1 cup, chopped onion

4 stalks celery

2 tablespoon rosemary

2 tablespoon sage

2.5 cups chicken Broth

5 cups sourdough bread cubes (about half a loaf - dried)

5 cups challah bread cubes (about half a loaf - dried)

2 cups diced pumpkin (skin removed)

 

(To dry bread for stuffing place bread cubes in a baking dish and bake in oven low 275°F for about 45 minutes stirring occasionally.)

Directions

1.         Preheat oven to 400 degrees and grease a 9X13 inch 

2.         Melt together butter and olive oil in a large pan over medium heat.  Add diced pumpkin and cook until tender.  

3.         Fold in chopped onions and celery and continue cooking for approximately 10 minutes to soften onion and celery.

4.         Add rosemary and sage, stir and cook for 1 minute.  Season with salt and pepper.

5.         Reduce heat to low and add rosemary, sage and chicken stock.  Season with salt and pepper to taste.  

6.         Place bread cubes in casserole dish (see drying instructions above) and pour veggie/pumpkin mixture over bread cubes.  Gently toss to coat evenly and bake for 20 minutes.
